Chile Chili

Somehow I got it into my head that I wanted to make chili without "chili powder." I found a good recipe for just such a dish in The Best Recipe. Instead of chili powder there was a mixture of ancho and New Mexico chile powders, oregano, and freshly ground, toasted cumin seeds. Instead of ground beef there was beef chuck, cut into rough 1 inch cubes. I've got to find words other than delicious to describe good food but this did turn out absolutely delicious. At first I was unconvinced. As it was cooking, I kept tasting the liquid and found it tasted raw and bitter, probably from the chile powders, but by the end, it had developed a full and robust flavor.
